Garlic Sausage and Acorn Squash Stew
A little late in getting this out. A good spicy stew this week tempered by the acorn squash.
Yes still cooking with slow cooker. Gather ingredients. Use 32 oz of your favorite broth stock vegetable, beef or chicken.
This HEB garlic sausage has a very good flavor for this stew. Cut into bite size pieces.
A nice large Acorn Squash cut into cubes. You can save the seeds to roast if you like.
2 Yellow onions peeled and diced. 3 or 4 celery stalks cut in small pieces.
2 carrots peels and chopped. Peel the leafy part of the Kale off and dispose of the stalks.
Put everything into the pot except the Kale. If the broth does not quite cover everything pour in a little water to cover. For lunch cook on High for about 2 1/2 hours then add the kale and cook for another 1/2 hour and it is ready to serve. Going to work or out for the day cook on low until you return and add the kale. Very good taste.
