Crock-Pot Blackberry Cobbler

The beef stew from last week was soooooo good decided to do it again this week. Also decided to try my hand at a desert for Bible study.

Crock-Pot Blackberry Cobbler

Ingredients

Fruit

4 cups fresh or frozen blackberries. fresh was on sale this week

1/2 cup granulated sugar (I used Turbinado as a substitute, we’ll see how that works out)

2 Tbsp corn starch

Cobbler Topping

2 Cups All purpose flour

1/2 cup granulated sugar (same as above)

1/4 cup butter melted

1/4 cup milk

1 Tsp baking powder

Pinch of salt

Instructions

1.  In the bottom of a 4 to 6 quart crock pot pour the blackberries. Cover with the sugar and cornstarch and lightly toss to coat the blackberries.

2.  In a medium bowl mix the cobbler ingredients until a soft dough forms. I make a little extra cobbler since some like it more than the fruit.

3.  Dot the top of the fruit in the crock pot with spoonfuls of cobbler dough, making sure to keep the dough off the side of the crock.

4.  Cover and cook on HIGH for 4 hours or until the fruit is bubbly and the dough is cooked through.

5.  Serve the way you like your cobbler.
